Coffee. Start the day with Dominican grown Arabica beans that are husked and roasted to a full city roast two pounds at a time just steps away from our cherished espresso machine.
Chocolate. From bean to bar we process cocoa into silky varieties of 70% Cacao.
Ginger, salted peanut, espresso, and crunch bars are some of our favorites.
Goat milk and Cheese. From our four lady milking goats comes our fresh chevre rolled in chopped herbs and spices. The milk makes the custard foundation from which the guava, chocolate, and salted caramel ice cream is made. Passion fruit cheesecakes are also a favorite!
Fresh baked bread. Everyday our sourdough starter begins the bread which is then rolled in oats, seasoned with rosemary, or sweetened with molasses. The loaves are roasted on fire for a wood smoked finished flavor.
Crescent Moon Soaps. Local coconut oil based Castile soaps are in every cabin. Aromatics from the garden such as rosemary mint, citronella bay, and cinnamon are blended into a creamy, natural soap.
Essential oils. Distillation of on site plants and flowers make up the essence of our soaps and perfume blends. Flowers and leaves from plants growing outside cabins are steam distilled and transformed into oils and hydrosols to refresh inside the cabins.
